Cardamom, one of the world’s most ancient spices, is a member of the ginger family. Cardamom has a distinctively pungent aromatic spice that is part of many different world cuisines. It is the second most expensive spice; only saffron costs more. Cardamom is used in curry powder, rice, meat, and dessert dishes. Appearance
Cardamom is a perennial with erect stems. The plant has downy leaves and flowers with a greenish-white corolla, containing a single fertile stamen set in the edge of the petals. The seeds are dark-reddish brown with a rough, wrinkled surface. Cardamom is found in southern India, Nepal, Guatemala, Mexico, Sri Lanka and Central America.
History
Cardamom is an expensive spice, second only to saffron. The ancient Egyptians chewed cardamom seeds as a tooth cleaner. The Greeks and Romans used cardamom as a perfume. Vikings discovered cardamom in Constantinople and introduced it into Scandinavia, where it remains popular as a flavoring for cookies and cakes.
Today, cardamom is used mainly in the Near and Far East. Cardamom is often included in Indian sweet dishes and drinks. At least partially because of its high price, it is seen as a ‘festive’ spice. In the West, Its commonest use is in Dutch ‘windmill’ biscuits and Scandinavian-style cakes and pastries. It appears in curries, is essential in pilaus, and gives character to bean dishes. Other uses are; in pickles, especially pickled herring; in punches and mulled wines and occasionally as a flavoring agent for meat, poultry and shellfish.
